How are u this chilly overcast day
 
Good afternoon guys. Thought I would jump on here for awhile. Haven't felt too good today. Just a lot on my mind with being unemployed and trying to keep up on my parents.
Think I will grill pork chops outside this evening for supper. Don't have any idea what I will have to go with the pork chops yet.
Another nice and sunny afternoon here this afternoon. Temps are running around 68 degrees.

Preparation Time 15 minutes

Cooking Time 35 minutes

Ingredients (serves 4)
750g sebago (unwashed) potatoes, washed
60g (3 tbs) butter, melted
Salt & ground black pepper, to taste
Method
Place the unpeeled potatoes in a medium saucepan. Cover with cold water and bring to the boil over high heat. Reduce heat to medium-high and boil, uncovered, for 10 minutes. Drain. Allow to cool completely.
Peel and grate the potatoes and place in a large bowl with the butter, salt and pepper. Toss well to combine.
Heat a small (18-20cm base measurement) non-stick frying pan over medium heat. Add the potato mixture and press down firmly. Cook for 15 minutes or until the base is golden brown and crisp.
Slide the rosti out of the pan onto a large board. Flip the rosti over back into the pan so that the golden side is now uppermost. Cook for a further 10 minutes or until cooked through and the base is golden brown and crisp.
Turn onto a serving plate, cut into wedges and serve immediately.
Notes & tips
serves: 4 as an accompaniment to goulash

I haven't really had a day off, in the traditional sense, since I started at the resort & that was 2 years ago

Thanks Kodie for the recipe. I printed out the recipe, thanks to Jon for showing me how to cut and paste.
That sounds good and easy.
I don't have the baby spinach or the plum sauce, but I do have a recipe for Citrus Barbecued Pork Chops, using any flavor of Kraft BBQ sauce, grated orange peel, orange juice, dried rosemary leaves, and dried thyme leaves. Place all ingredients in a sauce and bring to a boil, cover and let simmer 5 minutes. Pour sauce over cooked pork chops.
Serve with baked sweet potato and fresh cooked green beans.
This is all part of a 2100 calorie a day diet for diabetics.
